Evliya Çelebi was a 17th-century Ottoman traveler who wrote a ten-volume travelogue, Seyahatnâme. Lemon uses AI to reinterpret Çelebi's description of Chios' seventy-seven thousand acres of citrus vineyards, including twenty lemon varieties.
Chios' main exports were citrus fruits used to make desserts and candies in the palace halvahane. Royal confectioners traveled to the island to oversee the production, and the pricing was state-controlled.
